Such a wonderful, excellent, beautiful capture of the everyday ordinary in your world. I love them. (my Nathan has those same batman pajamas!) My favorite of the lot however is the crawl before you walk image. Just beautiful and moving. And if I haven’t said it before, thank you so much for starting this project. It has been the most amazing thing for me and I have loved loved loved it! I’m so excited for a year to be up so I can put them all in a book.

ah, March. you had me at crock pot. there is nothing a lady like me loves more than having dinner actually ready at dinnertime. most nights are spent over the stove, Violet on hip, trying to make patch together something that resembles dinner. the great thing about a slow cooker is that i can prep dinner during nap time and literally forget about it. and at about 5:30 all i have to do is pull out plates, pour some glasses of milk and sit down to enjoy. HUGE WEIGHT OFF MY CHEST.
so this month, we are tipping our hats to the one and only crock pot. yes, it may have had its hay day in the 80s but these here ladies all calling for a resurgence. nothin’ like a little “fix it and forget it”. this month i bring you an awesome Chicken Tortilla Soup. Add in some cornbread and you’ve got a pretty swell meal…
Chicken Tortilla Soup with Brown Rice
1 lb shredded cooked chicken
26 oz can of crushed tomatoes
14 oz red enchilada sauce
1 medium chopped onion
6 oz can chopped green chiles
2 cloves of minced garlic
3-4 cp of chicken broth
1-2 tsp cumin
1-2 tsp chili powder
1 tsp salt
1/4 tsp black pepper
1 bay leaf
2 cps cooked brown rice
1 package of frozen corn
corn tortillas
cilantro, lime and/or avocado for garnish
Pour everything into crock pot except for your corn tortillas and garnishes. Stir it around a little bit to get all the spices incorporated. Put your lid on and cook on LOW for 6-8 hours or on HIGH for 3-4 hours.

About 30 minutes before your set to eat, cut your tortillas into strips and then cut in half. Thrown in a bowl and drizzle with some olive oil and sea salt. Toss until coated.

Lay onto a baking sheet on cook on 350 for 8-11 minutes until crispy and golden.

While those tasty strips are in the oven baking, go ahead and chop up all your garnishes.
Just about now everyone is asking you what the heck smells so good. Scoop up some soup and toss your fixings on top. Just like that, DINNER IS SERVED!
